4 oz Monterey Jack Cheese
¼ cup mayonnaise
¼ cup sour cream
½ tsp salt
1 garlic clove, pressed
1 package (9oz) frozen chopped spinach, thawed, drained and patted dry
⅓ cup chopped carrot
¼ cup chopped onion
20 (¼ inch thick) French Bread Slices

Directions:

1. Preheat oven to 375º

2. Cut cheese into 20 thin slices; cover and set aside.

3. In large bowl, combine mayonnaise, sour cream, salt and garlic; mix until well blended. Stir in spinach, carrot and onion.

4. Spread rounded Tbsp spinach mixture onto each bread slice.

5. Place on baking sheet; top with cheese.

6. Bake 10-12 minutes or until cheese is melted and bread is crisp. Serve warm.
