3 C flour
2 C sugar
1 tsp baking soda
1 tsp cinnamon
1 tsp cloves
1 tsp salt
1 1/4 C oil
3 eggs, beaten
2 tsp vanilla
5-6 tart apples, peeled and chopped
1 C chopped black walnuts

Sauce:
1/2 C heavy cream
1/2 C half and half
1/4 C sugar
2 egg yolks
1/4 C Calvados brandy

Directions:
Directions:
Preheat oven to 375º. Combine flour, sugar, baking soda, spices and salt. Stir in oil, eggs and vanilla (mixture will be dense). Blend in apples and nuts. Pour into 9" spring form pan and bake for about 70 minutes, or until top of cake is crisp and dark golden brown (do not under bake). Cool on a wire rack before removing sides of pan.

Sauce:
Combine cream and half and half, bring to a boil and set aside. Beat together sugar and eggs, then slowly add cream mixture, whisking to blend. Return to low heat and stir until mixture coats the back of a spoon. Let cool, then stir in brandy before serving over cake.
