1.5 lbs brussel sprouts
6 slices applewood smoked bacon, chopped
1 T. grainy mustard
2 t. honey
1/4 c apple cider vinegar
2 tart apples, chopped

Directions:
Directions:
Trim brussel sprout ends, and discard any blemished outer leaves. Slice brussel sprouts very thinly and transfer to a bowl. Fry bacon until brown and crispy. With slotted spoon, transfer bacon to paper towel. Discard all but 1/4 c bacon fat, return to heat and whisk in mustard, vinegar and honey until well combined. Drizzle over brussel sprouts. Add bacon and chopped apples. Season with salt and pepper.
