Boston Cream Pie (Southern Living) Recipe

1/3 C Shortening
2/3 C sugar
2 eggs
1 C sifted cake flour
1 tsp baking powder
pinch of salt
1/2 C milk
1/4 tsp butter flavoring
1/2 tsp vanilla

Cream filling:
1/2 C sugar
1/4 C cornstarch
1/4 tsp salt
2 C milk
4 egg yolks, slightly beaten
1/2 tsp vanilla

Chocolate3 glaze:
2 T butter
1 oz. square unsweetened chocolate
1 C sifted powdered sugar
2 T boiling water

Directions:
Directions:
Cream shortening. Gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each.
Combine flour baking powder and salt and add to creamed mixture alternately with milk, beginning and ending with flour mixture. Stir in flavorings.
Pour batter into a greased and floured 9" round cake pan. Bake at 325º for 25-30 minutes until toothpick comes out clean. Cool in pan 10 minutes then remove from pan and cool completely.

Cream filling:
Combine sugar, cornstarch and salt in a heavy saucepan. Gradually add milk and stir with a whisk until well blended. Cook over medium heat stirring constantly until mixture comes to a boil. Boil stirring constantly about 1 minute until thickened and remove from heat.
Gradually stir 1/4 of hot mixture into egg yolks and add to remaining hot mixture, stirring constantly. Return to medium heat and bring to a boil, stirring constantly. Boil 1 minute still stirring, until thickened and smooth. Stir in vanilla and let cool.

Chocolate glaze:
Combine butter and chocolate in top of a double boiler and bring water to boil. Reduce heat to low and cook until chocolate melts. Cool slightly. Add sugar and water and beat until smooth.

Split cake layer in half horizontally to make 2 layers. Spread cream fillig between layers and spread chocolate glaze over top. Refrigerate until serving.
