5 lb. ground beef
7 tsp. Tender Quick salt
2 1/2 tsp. garlic salt
2 1/2 tsp. black pepper (coarse)
3 tsp. liquid smoke
2 1/2 tsp. mustard seed

Directions:
Directions:
Mix well. Refrigerate in covered bowl for 3 days, mixing and kneading once each day. 4th day: Form into 8" logs. Bake in oven at 150º-200º for 8 hours on rack with pan underneath for grease to drain. Turn after 4 hours. When cooled, use electric knife to slice into desired thickness. For spicy summer sausage, add 1/2 tsp. ground red pepper. You can add red pepper to only half of the recipe so you can have mild and hot from the same batch.
