1 pound ziti or penne pasta
Olive oil
1 pound ground turkey (or sausage)
1 large onion, chopped
Bell Pepper (I use green, red, yellow/orange) for color
3-4 garlic cloves, chopped
1 Tbsp Italian seasoning
1 large jar of pasta sauce (about 32 ounces)
1 heaping cup mozzarella cheese (or Colby Jack)

Directions:
1 Bring pot of water to boil. Add salt & olive oil to water. Add the pasta, cook uncovered, until the pasta is al dente—edible but still a little firm to the bite.
2 Brown the meat. Break up any large chunks as it cooks. Season meat. I tend to use seasoning salt, pepper, Italian seasoning.
3 Saute onions, bell peppers. Add garlic. Then mix in pasta sauce: When the meat is browned, add to the pasta sauce. Mix well.
4 Preheat the oven to 350°F.
5 Layer sauce, cheese, pasta in casserole dish: Spread a thin layer of sauce in the bottom of a 9x13-inch casserole pan, then dot the surface with half the cheese. Ladle a spoonful of sauce into the pasta, stir it well and then add the pasta into the casserole.
6. Pour the rest of the sauce over the pasta, dot the remaining cheese over the pasta, and sprinkle top with mozzarella and/or Parmesan cheese.
7. Bake 20 min: Bake in oven at 350°F until the top is lightly browned and the cheese melted, about 20 minutes.
