2 tsp Cooking Oil
2 Chicken Breasts ( skinned and cut in chunks)
2 cups thinly sliced Carrots
3 ribs Celery, cut in ½ inch diagonal slices
3 Green Onions (chopped)
¼ cup sliced Water Chestnuts
1 can 3 oz sliced Mushrooms rained or 1 cup fresh sliced mushrooms
2 tbsp Sugar mixed with ¼ cup soy Sauce
1 pkg 10 oz frozen Spinach , cooked.

Directions:
Directions:
Heat oil in skillet and add chicken a little at a time .
Cook and stir over high heat 5 mins or until lightly browned.
Add carrots, celery, onion, chestnuts and mushrooms and cook and stir
5 mins or until crisp tender.
Stir in soy sauce mixture and cook over high heat about 1 min.
Arrange spinach on heated platter and heap chicken mixture in centre.
