3 1/2 lbs. filet of beef
3/4 cups red wine vinegar
1/2 cup olive oil
3 Tbsp. lemon juice
1 tsp. salt
pepper to taste
1 tsp. oregano
1 tsp. basil
2 cloves garlic, crushed
2 onions, grated
3 green peppers
1 box cherry tomatoes
1 eggplant, cut into 1/2" cubes
1 lb. mushrooms

Directions:
Directions:
Trim any fat off the beef and cut the meat into 1-inch cubes. Mix the wine vinegar, lemon juice, salt, pepper, garlic, oregano, basil, onion, and olive oil. Put beef in dish and cover with marinade. Chill for several hours, turning beef to ensure it marinades evenly. Cut the green peppers into 1 1/2 inch squares. Put beef and vegetables onto skewers and brush with marinade. Broil for 5 minutes. Turn, brush again, and broil for 4 minutes.

Makes 10-12 servings.
