3 1/2 lbs. chicken, back and wings
2 onions
2 stalks celery, cut up
2 carrots
2 tsp. salt
3 quarts water
3/4 cup rice
5 egg yolks
4 Tbsp. lemon juice

Directions:
Directions:
Put the chicken into a soup kettle with onions, celery, carrots, and salt. Cover with the water and bring to a boil. Reduce heat and simmer, covered, for 2 hours. Strain and skim off excess fat. Add the rice and simmer for 20 minutes. Beat the egg yolks with the lemon juice. Add a little soup slowly to the egg-lemon mixture while stirring; return to kettle and heat, but don't let the soup boil.

Makes 10-12 servings.
