1-1 1/2 lbs. potatoes
4 Tbsp. butter
salt
parsley or cilantro

Directions:
Directions:
Peel the potatoes and cut them in small pieces the size and shape of large olives. Cook them in boiling water for 1 minute, drain, and dry well. Melt the butter in a large frying pan, add the potatoes and cook gently, carefully shaking the pan occasionally, until the potatoes are cooked and golden brown. Drain. Serve either in a heated dish or on a serving plate sprinkled with salt and garnished with finely chopped parsley/cilantro.

Makes 8 servings.
