4 high quality steaks
butter for basting

2 Tbsp. butter
1 tsp. lemon juice
1 tsp. finely chopped parsley or cilantro
salt
pepper

Directions:
Directions:
Maitre d'hotel Butter: Cream butter with a wooden spoon until soft. Add lemon juice and parsley/cilantro with salt and pepper. Beat well until they have been thoroughly combined. Make into a long "sausage," wrap in foil, and chill until needed.

Over a very hot grill, quickly seal the outside of the steaks and then reduce the temperature and continue cooking for about 20 minutes (or until cooked to your liking). Baste occasionally with melted butter.

Slice the Maitre d'Hotel Butter into individual portions. Serve the chateaubriand with a slice of the butter on top.

Makes 4 servings.
