2 ripe avocados
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. dry mustard
3 Tbsp. olive oil
1 Tbsp. vinegar
lettuce for serving

Directions:
Make the vinaigrette: place the seasonings in a bowl, add a little oil and mix to a smooth paste, add the remaining oil, and then the vinegar. Whisk very briskly until the dressing is emulsified and the vinegar and oil are thoroughly mixed.

Cut the avocados in half lengthwise and remove the stones carefully. Spoon a little vinaigrette dressing over the cut surfaces to prevent them from discolouring. Place each half of avocado on a bed of lettuce on individual serving dishes. Spoon the remaining dressing into the hollows left by the stone. Serve cold.

Makes 4 servings.
