2 lb. fresh mushrooms
1/2 cup flour
2 tsp. salt
dash black pepper
4 eggs, beaten
1 1/2 cups fine dry bread crumbs
4 cups vegetable oil

Directions:
Directions:
Rinse, trim mushrooms, and pat dry. Combine flour with salt and black pepper. Coat mushrooms first with flour mixture, then dip in eggs. Roll in bread crumbs.

In a fondue pot over medium-high heat, warm the oil until it registers 375 degrees on a deep frying thermometer or until a cube of bread dropped into the oil browns evenly in 20-30 seconds.

Using pot holders, carefully place the fondue pot with the hot oil on the stand and set it on the table.

For each guest, provide a small plate lined with a paper towel. Instruct each guest to spear a mushroom with their fondue fork and fry in the hot fat until golden brown, about 3 minutes. Drain on paper toweling and enjoy.

Makes 8-10 servings.
