2 tsp vegetable oil
1 cup sliced carrots
1 cup sliced celery
1 cup chopped onions
1 whole chicken, cut up
10 cups water
3/4 cup corn
1 T salt
1/2 tsp pepper
3/4 cup uncooked egg noodles
2 bay leaves

Directions:

In a very large (6-8 qt) saucepan or dutch oven, heat oil over medium high heat. Add carrots, celery and onions; cook and stir 5 minutes. Add water, chicken, corn, salt, pepper and bay leaves. Bring to boil; cover, reduce heat and simmer for 1-1/2 hours. Remove chicken from broth; set chicken aside. Bring broth to boil again; stir in noodles. Boil vigorously, uncovered 8-10 minutes or until noodles are tender, stirring occasionally. Remove chicken from bones, shred or cut into bite size pieces and stir into broth. Remove bay leaves before serving.
