5 cups frozen chopped spinach (thaw, squeeze out water and set aside)

3 teaspoons butter
3 cups onion chopped
¼ cup flour
¼ teaspoon nutmeg
1 cup cream
2 cups milk
½ cup shredded parmesan cheese
2 teaspoons salt
½ black pepper

Directions:
Directions:
Saute onion in butter until soft. Remove from heat. Add flour, nutmeg, and stir. Add cream and milk. Add parmesan, salt and pepper. Stir in drained spinach.

Put in a baking dish and top with additional half cup parmesan cheese.

Bake at 350 degrees for 20-30 minutes, till bubbly.
