1 large eggplant
1/3 c. milk
1 can cream of mushroom soup
1 egg, slightly beaten
1/2 c. onions, chopped
1 1/2 c. herb-seasoned bread crumbs, divided
2 TB butter, melted
1/4 sharp cheese, grated

Directions:
Directions:
Peel and cube eggplant. Cook in boiling water for 7 mins. Mix together milk, soup, egg, onion and 3/4 c. bread crumbs. Add drained eggplant and put in ungreased casserole dish. Make a cheese and crumb topping by combining butter, cheese, and 3/4 c. bread crumbs; mix and sprinkle over top. Bake cover 350º for 30 mins.
