240 lb. hog
1 lb. butter, melted
1-2 TB Vegeta

Gut and dehair hog (or buy it that way). Melt butter and stir in Vegeta. Inject into hog's hams, loins and shoulders in several places with melted butter mixture. Place apple in hog's mouth. Roast 8-10 hours over hickory or apple wood fire, turning once. We usually rent a whole hog roaster. Makes it much easier to handle and cook. Can be done in a hole in the ground with the hog quartered and wrapped in burlap sacks. Build fire in bottom of hole and let burn hot until you have a very nice bed of coals and no flames. Wet the burlap sacks and wrap hog in it. Lay on top of coals and fill dirt back into hole. Let bake for 8-10 hours depending on size of hog. Take hog out of hole, unwrap and serve.
