2 1/2 cups sifted flour
3/4 cups sugar
1/2 tsp. salt
1/4 lb. plus 2 Tbsp. butter
2 eggs

Directions:
Directions:
Sift the flour, sugar, and salt together into a large bowl. Break the butter into bits into the bowl and work into the flour mixture with your hands. Add the eggs and blend them into the mixture. Shape the mixture into a ball and knead on a lightly floured board just until the ingredients are well blended. Roll the dough into a circle about 3/8 inch thick.

Heat the oven to 350 degrees. Butter the bottom and sides of a round layer cake pan. Place the dough into the pan, covering the sides and the bottom. Let the dough project all the way up the sides of the pan and a bit above the edge, since it shrinks a little in baking.

Bake the empty crust for 5 minutes. Then remove it and add the filling (recipe below)

Pour the filling into the crust and bake at 350 degrees for 30 minutes.


TIP: A springform pan may be easier to use and provide a prettier presentation.

Makes 12 -16 servings.
 

Cheese Cake Filling

1/2 lb. cream cheese
1/2 cup sugar
4 eggs
1/4 cup seedless raisins
4 dried apricots, diced
1/4 cup vodka

Directions:
Directions:
Let the cream cheese stand at room temperature until soft. With an electric mixer, blend the sugar into the cheese. Add the eggs and vodka and mix well. Mix the raisins and apricot bits in with a spoon or spatula.
