2 medium red cabbages
2 tsp. salt
4 Tbsp. butter
2 large cooking apples, peeled and diced
¼ tsp. pepper
2 Tbsp. sugar
¼ cup lemon juice
2 Tbsp. vinegar

Directions:
Directions:
Wash and shred the cabbage and place in a large pot. Pour enough boiling water over the cabbage to cover it completely. Put the cover on the pot and let it stand for 20 minutes. Drain in a colander and melt the butter in the same pot. When the butter is melted, return the drained cabbage to the pot, add the salt and stir well. Add the apple to the cabbage mixture, cover the pot and cook slowly for 30 minutes, stirring occasionally. Remove the pot from the stove and add the pepper, sugar, lemon juice, and vinegar. Taste and adjust seasoning if necessary.

Makes 10-12 servings.
