Crepes:
4 eggs, beaten
¾ c. milk
1 c. flour
½ tsp salt
2 tbsp. oil

Filling:
1 lb. whole milk ricotta
2 eggs
½-1 c. Parmesan cheese (to taste)
handful of parsley, chopped

Directions:
Directions:
1. Whisk together crepe ingredients until smooth.
2. Spray nonstick pan (or cast iron skillet). Do not need to spray between each crepe.
3. Pour about a ¼ cup of batter into pan and swirl pan from side to side to get an even circle. Makes about 12.
4. Whisk together the filling ingredients.
5. Fill each crepe with about a ¼ cup of filling and lay crepe seam side down in a pan lined with gravy.
6. Top crepes with gravy and sprinkle with cheese.
7. Bake for 35 min in a 400º preheated oven. Periodically check on crepes as they can burn quickly.
