4 packages Ramon Noodles (any flavor but chicken is best)
1 bunch of scallions, chopped
1 package shredded red cabbage (a package is usually 6 oz)
1 cup cashews
1 can dry chow mein noodles
Dressing:
Flavoring packages from noodles
⅓ cup vegetable oil
4 tsp sugar
3 tsp red wine vinegar (or balsamic vinegar)
1 tsp salt
1 tsp pepper

Directions:
Directions:
Cook and drain noodles (saving flavor package for dressing), then cool in refrigerator. The noodles should be cold before you mix in the cabbage.
(Tip: break noodles in half before cooking so they are not too long in the salad)

Mix together: oil, sugar, vinegar, salt and pepper, stir in the flavor seasoning packages.

Add dressing to noodles a little at a time, and then add in cabbage, scallions and cashews.
(You may not need the full amount of dressing and I usually do not use all of the cabbage or scallions either)

Just before serving add the dry chow mein noodles or serve on the side if you plan on having leftovers.
