10 medium potatoes, peeled, washed and quartered. (You can cut down on the amount of the potatoes)
¾ to 1 c oil (I use Canola)
1 medium onion, peeled and chopped (optional)
1-½ tsp minced garlic
salt and pepper to taste
2 to 3 TBSP bacon grease (optional)

Have your grease and oil hot. Add potatoes, onion, and garlic.

Fry uncovered for about 45 minutes, turning down stove after potatoes have browned, and simmer until done.
