1 1/2 c Long Grain White Rice
1/4 c Oil
1 tsp Minced Garlic
1/4 Medium Onion, finely diced
1/4 c Tomato Sauce
3 1/4 tsp Knorr Tomato Bouillon (found in Hispanic food section in Walmart)
1/4 tsp Salt
1 small bag Frozen Peas and Carrots
3 1/4 c Water

Directions:
Directions:
1.) Rinse and drain the rice in a fine mesh strainer.
2.) Saute onion and garlic and set aside.
3.) In a large saucepan over medium-high heat, add the oil and rice and stir to combine.
4.) Cook rice, stirring frequently, until lightly golden brown all over (about 10 minutes).
5.) Stir in tomato sauce, garlic, and diced onion.
6.) Mix the bouillon into the water and add to pot with veggies and salt.
7.) Bring to a boil, then cover, reduce heat to low and cook for about 20 minutes or until the water is completely absorbed.
8.) Remove from heat and allow to rest for 5 minutes before fluffing with a fork.
