1 box Pie Crust (pre-made, 2 rolls)
1 Tbsp Oil
1 lb Lean Ground Beef
1/4 c Diced Onion
1/2 Diced Bell Pepper (medium, any color)
1 tsp Cumin
1 tsp Minced Garlic
1/4 tsp Salt
1/4 tsp Pepper
1 tsp Chili Powder
1 c Cheese (Mexican blend)
1 Egg

Directions:
Directions:
1.) Preheat oven to 375 degrees.
2.) In a skillet, heat oil and saute onion, bell pepper and garlic.
3) Add hamburger, cumin and chili pepper to the pan and cook until meat is cooked through.
Set pan aside and let cool.
4.)While meat mixture is cooling, roll out pie crust. Cut out round discs from pie crust to desired sizes.
5.) Spoon mixture in the center of each pie disc (leaving room to fold and seal) and top with cheese.
6.) Fold over and seal edges with a fork.
7.) Place empanadas on a cookie sheet. Whisk egg and brush on to tops.
8.) Bake in oven for 15 - 20 minutes.
