2 c. plus 5 c. water
2 c. cornmeal
2 tsp. salt or more if you like a saltier mush

Directions:

Using a 3 quart pot, mix together 2 c. water with cornmeal and salt, stirring until all is dissolved. Add 5 c. water and cook on medium heat until starting to thicken. Reduce heat to low and continue to simmer for 20-30 mins or until consistency of thick applesauce. Pour into 2 small, ungreased bread pans. Store in refrigerator after cooling. At breakfast time, slice in 3/4" thick slices and fry in skillet with butter until browned on both sides. Serve with maple syrup and honey. Can also be eaten warm (before chilling) as a pudding with breakfast.
