2 Tb butter
1/4 c. flour
2 c. milk
1/4 tsp. pepper
1 c. American cheese, shredded
1/2 tsp. salt
1 c. ham, cubed
1/4 c. green onions, thinly sliced
12 eggs, beaten
3 TB butter
2 1/2 c. soft bread crumbs
1/4 c. butter, melted

Directions:
Directions:
Melt 2 TB butter and blend in flour. Cook for 1 min, stirring constantly. Do not allow to brown. Gradually stir in milk. Cook until thick. Add salt, pepper and cheese. Stir until cheese melts. Set aside. Sauté ham and onion in 3 TB butter until onions are tender. Add eggs and cool over medium heat until eggs are set. Stir in cheese sauce. Pour into a 9"x13" baking pan. For topping mix 1/4 c. melted butter over soft bread crumbs. Spread evenly over egg mixture. Cover and chill overnight. Bake uncovered at 350º for 30 mins. Very good!
