4 large potatoes or 2 lbs. hash browns
Butter for frying
1 lb. smoked sausage ,diced
3 TB onions, chopped
3 TB green peppers, chopped
12 eggs
1/4 c. milk
3/4 tsp. salt
1/4 tsp. pepper

Cheese Sauce:
1/4 c. butter
1/4 c. flour
1/4 tsp. salt
1 3/4 c. milk
1 c. sour cream
1 lb. Velveeta cheese

Directions:
Directions:
Cook potatoes, cool and shred. Chop onions and peppers and fry in a little butter, then add sausage pieces and fry. To make scrambled eggs: Beat eggs, add milk, salt and pepper. Beat again. Put a little butter in pan and pour in eggs. Turn on medium heat and keep stirring and scraping until eggs are set. Chop into small pieces. Put potatoes, meat mixture and eggs in a bowl.

Cheese Sauce: Pour cheese sauce over all and fold gently until sauce is mixed in. Pour evenly into greased 9"x13" pan. Refrigerate overnight. Next morning, set out 1/2 hour before baking. Bake at 350º for 45 mins or until hot.
