1 1/2 c. Bisquick
1/3 c. water
7 eggs
3 c. shredded, fried potatoes
3 TB onions, chopped
1 lb. Velveeta cheese or less
1 lb. bulk sausage
1/4 c. butter
1/2 c. flour
5-6 c. milk
Salt and pepper to taste

Mix Bisquick and water. Press into a 9"x13" pan. Bake at 350º for 8 mins. until done. Beat eggs and fry until done. Add a few slices cheese. Sauté onion in a little butter. In saucepan fry sausage until done. Remove sausage from skillet. To remaining drippings add butter. Let brown and add flour. Stir until flour is moistened. Gradually add milk, stirring constantly. Season with salt and pepper depending how spicy the sausage is. Stir constantly until it come to a boil. Return sausage to skillet and heat. Over hot crust, layer scrambled eggs, fried potatoes, cheese and sausage gravy. Cover and bake 350º until hot.
