1 tbsp olive oil
1 1/4 c chopped onions
1 c each chopped green pepper and red pepper
3/4 c each chopped celery and chopped carrot
1 tbsp minced garlic
1 1/2 c sliced mushrooms
1 c unpeeled, diced zucchini
1 tbsp each chilli powder and ground cumin
1/2 tsp each basil and oregano
1 28 oz can diced tomatoes, undrained
1 19 oz can of black beans, drained and rinsed
1 19 oz can of chickpeas, drained and rinsed
1 12 oz can kernel corn, undrained
1/2 tsp cayenne pepper
1/2 tsp salt
2 tbsp minced fresh cilantro

Heat oil in a large pot over medium heat. Add onions, green and red peppers, celery, carrots and garlic. Cook and stir until vegetables begin to soften, 5-6 minutes.
Add mushrooms and zucchini. Cook and stir for 4 more minutes. Add chilli powder, cumin, oregano and basil. Cook for 1 more minute. Add tomatoes, beans, chickpeas, corn with liquid, cayenne pepper and salt. Mix well. Bring to a boil. Reduce heat to medium low . Cover and simmer for 20 minutes. Remove from heat and stir in cilantro.
