3 chicken breasts cut into 1 ˝ inch cubes
3 Tbsp Wondra flour
˝ tsp salt
˝ tsp pepper
2 Tbsp extra virgin olive oil
1 Tbsp chopped garlic
3 Tbsp fresh chopped parsley
2 Tbsp unsalted butter
1 lemon quartered

Directions:
Directions:
1. Dry chicken cubes with paper towels and toss in a bowl with flour, salt, and pepper.
2. Heat oil in skillet until very hot, but not smoking
3. Add chicken and cook in one layer, turning once, for about 3 ˝ minutes.
4. Meanwhile, combine garlic and parsley in small bowl. Add butter and parsely mixture to the pan and sauté 1 minute longer, shaking pan occasionally to completely coat chicken.
5. Take chicken out of skillet and squeeze lemon quarters into the pan and pour over chicken.
