2 C All-Purpose Flour
1 C Yellow Cornmeal
3/4 C White Sugar
1/2 tsp Salt
1 Tbsp Baking Powder
2 Large Eggs
1-1/2 C Whole Milk
1-1/2 Tbsp Vegetable Oil
1/4 C melted Butter
2 C Fresh or Frozen Corn Kernels

1 Preheat oven to 350º Lightly oil a 9 inch Cast-Iron Skillet and place in oven to heat-up.
2. In large Bowl, sift Flour, Cornmeal, Sugar, Salt and Baking Powder. In a separate bowl, whisk together the eggs, milk, and oil. Pour the wet ingredients over the dry ingredients, add the melted butter and the corn and stir together until just mixed.
3. Remove the hot Cast-Iron Skillet from oven and pour into it the Batter - smack on cutting board to make batter settle to bottom.
4. Return the Skillet to the oven and bake, approx 1 hour, until the Corn Bread is browned on top and a toothpick or thin knife inserted into the top comes out clean
