1 LB ground beef

1 TBSP minced garlic or 1 tsp garlic powder

2-3 (15-oz) bags Publix Vegetable Soup Mix*

32 oz beef broth

1 TSBP Italian seasoning (optional)

Directions:
Directions:
In skillet, brown ground beef with garlic. Drain off excess fat.

In a large pot, place beef broth, vegetable soup mix and browned ground beef. Add water or more broth, if desired. Bring to a boil. Reduce heat, cover, and simmer over low heat 30 minutes, until flavors are well blended and soup is hot. Season to taste.

Serve with cornbread or crackers.

Every summer growing up, when vegetables were in season, we would combine all of the vegetables and prepare them for the freezer. Once the winter came, we would grab a bag out of the freezer and make this soup. Luckily, Publix now sales the same vegetable mix in their frozen vegetable section. Saves a great amount of time and money.
