1 cup sugar
3 cup Flour
1 cup Butter
2 tsp Baking Powder
2 Eggs
½ tsp salt
½ tsp Almond Extract

Cherry Filling

16 oz Maraschino Cherries drained saving 1 cup liquid
2 Tbs Cornstarch
½ tsp Salt
2 cups ground Blanched Almonds

Directions:
Directions:
Preheat oven to 375*. Cream butter and sugar. Beat in eggs and extract. Stir in sifted dry ingredients. Divide in half and chill. Roll one half into an 8 X 10 inch rectangle.

For Filling, drain cherries saving 1 cup of the liquid. Thicken the liquid with cornstarch stirring constantly over low heat. Remove from heat & add salt. Chop cherries finely and add to thickened liquid & ground almonds. Cool.

Spread with half of the Cherry filling. Roll up like a jelly roll. Slice and bake for 8 – 10 min.
