1 ½ cup white whole-wheat flour
½ packed brown sugar
2 tsp ground cinnamon
¼ tsp salt
¼ cup butter, melted
¾ cup buttermilk
1 egg
2 Granny Smith apples, peeled & cut into ¼ in. cubes
½ cup raisins
Nuts, seeds, etc. optional

TOPPING
¼ cup butter
½ cup rolled oats
1 Tbl brown sugar
1/3 cup Nuts, seeds etc. optional

Directions:
Directions:
Preheat oven to 400º. Line 36 mini muffin pans. Combine dry ingredients & set aside. Melt ¼ cup butter. Whisk together melted butter, buttermilk & egg. Stir in dry ingredients. Fold in apples.
Using a food processor combine butter, oats, brown sugar and seeds. Fill muffin tins with muffin mixture and top each with 1 tsp topping. Bake for 15 minutes or until lightly browned.
