2 cups quick oats
1 cup sugar
2 cups flour
½ tsp salt
¾ cup shortening

Filling:
½ lb ground pitted dates
1 ½ cup sugar
½ cup water

Directions:
Directions:
Mix as pie dough. Add ½ cup buttermilk & a little soda. Mix well, roll very thin; cut out circles & bake at 375 till light brown. Cool
Filling - Cook together and cool. Spread filling on cookie and top it with second.
