10 oz bacon, cooked and crumbled
2 Tbsp butter
2 lbs brussels sprouts (trimmed bottoms and cut in half lengthwise)
salt and pepper to taste
5 cloves garlic, minced
11/2 c light cream
1/3 c fresh shredded or grated mozzarella
1/4 c fresh shredded or grated parmesan

Preheat oven to broil.

Fry and crumble bacon in oven safe pan (cast iron skillet works great), drain and set aside.

In same pan, using 1-2 tbsp bacon fat, melt butter and add brussels sprouts. Season with salt and pepper. Cook over medium heat charring brussels slightly. Add garlic and cream, reduce heat and simmer to reduce cream 3-4 minutes. Add bacon and mix together.

Top sprouts with cheese and place under broiler until cheese melts and browns, watching carefully to avoid burning.
