1 ¼ c spaghetti- broken into small pieces
2 c turkey or chicken, leftover chopped
¼ c diced pimientos
¼ c chopped green pepper (optional)
1-3/4 c grated sharp cheddar
1 can cream of mushroom soup
¾-1 c broth
½ TBSP salt
⅛ TBSP pepper

Directions:
Directions:
Cook spaghetti and drain. Place meat, pimiento, and pepper in 9x13 casserole.

Combine broth and soup. Add salt, pepper, 1-¼ cup cheese and spaghetti. Toss gently until coated w/sauce.

Sprinkle remaining cheese on top.

Refrigerate OR bake @ 350 for 45 minutes or until bubbly.

Note: You can also add mushrooms for a nice touch.

The recipe is actually named Chickenette. However, as a kid, Lewis was called Eddie. He always thought it was named after him. Thus, he called it "Chicken Eddie".
