For 5 Pounds Beef

1 gallon Water
1½ cups Salt
¼ cup Minced garlic
8 tsp Cure #1
½ cup Dark brown sugar
1 cup Sugar
¼ cup Honey
1 tbsp Pickling Spice

Directions:
Directions:
Combine all ingredients in a stockpot and bring to a boil. Cool. Inject beef to 15% and brine in the refrigerator for 3 days. Rinse in cold water. Dry, then coat with 1 tbsp each coriander seeds, black peppercorns (toasted, then cracked). Sprinkle with paprika then place in the smoker at 140º with the damper open for 2 hours. Close damper to ¼ open and run through 2 pans of chips at 140º. Raise the temperature and cook to 150º. Cool at room temperature, then refrigerate.
