2 Ducks OR 1 large chicken½ cup Rice blend
1 cup Stock
2 Garlic cloves, minced
2 tbsp Bacon fat
2 Mushrooms, diced
6 oz Bacon, diced
½ cup nuts (any variety), chopped
2 tbsp Pine nuts
1 Apple, cubed
1 Celery stalk, diced
½ cup Leeks, chopped
1 Carrot, diced
¼ cup Chopped parsley
1 tsp Allspice
1 tsp Ground thyme
1 tsp Ground bay leaves
1 Egg
½ cup Stock
¼ cup Heavy cream
½ cup Panko
1 tsp Sage

STEP 1

Bring 1 cup stock to a boil and add the rice. Cover and cook on low heat until stock has evaporated and rice is tender.

STEP 2

In a saucepan, brown bacon in fat. Add the garlic, celery, mushrooms, leeks, pine nuts, apples, carrots, parsley, and spices. Cook until vegetables are soft. Transfer contents to a bowl and add egg, stock, cream, panko bread crumbs, sage, and salt and pepper. Mix well.
