Potatoes, peeled and cut up
1 jar sauerkraut, slightly rinsed (depends upon how tart you want it)

Sausages (soy or turkey), cut in one inch pieces

Dumplings (optional)

1 ½ C flour
2 tsp. baking powder
¾ tsp. salt
3 T shortening
¾ C milk

Boil potatoes and sauerkraut until potatoes are partially done, then add sausages (soy, turkey or whatever), cut in one inch pieces

Boil for another 20 minutes. Serve.

You can also add dumplings to this stew. Mix dumpling dry ingredients, then cut in shortening. When evenly mixed, stir in milk. Drop slowly by spoonfuls into stew careful not to splash on yourself. Boil for 10 minutes uncovered, then cover and boil another 10 minutes or until dumplings are fluffy. I sometimes half again or doubled this recipe for the stew, as the family really liked lots of dumplings!
