Rice Vegetarian Dinner Recipe

6 T butter
1 C green onions, finely chopped (optional)
1 C celery, sliced
1 cup green pepper, finely chopped
4 C cooked brown rice (can use white)
¾ C almonds or walnuts, chopped
½ C vegetable stock or water
1 tomato, sliced
4 oz. cheddar cheese, thinly sliced

Directions:
Directions:
In frying pan, melt butter, add onions, celery, green pepper and sauté until soft. Add rice and nuts. Add stock until all ingredients are well moistened. Place sliced tomatoes over top. Layer with cheese. Cover and cook for 5-10 min.

(Note: we've made it
without any of the optional ingredients and it tastes great)
