1 C quick-cooking oats
1 tsp. salt
1 tsp. sage

3 eggs, beaten well
1 medium onion, chopped (optional)

Gravy - choose from:
Broth of your choice made into homemade gravy using flour (my fave)
Half can each of tomato soup & mushroom soup
Packaged brown gravy

Directions:
Directions:
Mix first 3 ingredients in bowl. Beat eggs until thick and yellow. Stir oat mixture into eggs quickly and fry in hot oil, just long enough to brown lightly on both sides. Remove at once to warm plate. When all are fried, replace in pan and cover with gravy. Simmer till some of the gravy is absorbed (approximately 20 minutes)

Most of the time, I use my favorite vegetarian broth (chicken flavor) made into homemade gravy w/flour.
