For 3 Pounds Eye of Round

2 tbsp Course salt
2 tbsp Sugar
2 tbsp Cure #2
1½ tsp Course black pepper
1½ tsp Rosemary
1 tsp Thyme
5 Juniper berries, crushed
1 tsp Allspice
½ tsp Ground coriander
¼ tsp Ground cloves

Directions:
Directions:
Combine all ingredients. Rub ½ of the mixture on the meat. Place in a Ziploc bag and refrigerate for 7 days. Drain and rinse the meat. Place on a towel to dry. Rub on the remaining cure on to the meat and refrigerate for an additional 7 days. Rinse under cold water. Dry for 2 hours. Place the meat in a stockinette and hang to cure for 3 weeks. Meat should be firm on the outside and silky smooth when cut.
