For 12 Pounds

1 oz Peppercorns
15 Cloves
5 Allspice berries
2 tsp Nutmeg
7 grams Crushed chilies
15 Juniper berries
6 oz Salt
2 tsp Cure
¼ cup Garlic
¼ cup Red wine
¼ cup Demerara sugar
1 tsp Ground bay leaves
1 tsp Thyme

Directions:
Grind spices. Mix together all ingredients except the wine. Rub onto pork bellies. Sprinkle the bellies with wine. Place in a container and brine for 8-15 days until firm.
