For 8 Pounds

4 quarts Water
1½ cups Pickling salt
1 cup Sugar
42 grams Cure #1

Directions:
Directions:
Combine and bring to a boil all ingredients. Add the pork hocks. Weigh down with a plate and heavy jar. Brine for 3 days. Remove from the brine and rinse. Dry in the refrigerator for 24 hours. Smoke to an internal temperature of 150º.
