3 eggs
1 C oil
2 ½ C sugar
2 C grated, raw unpeeled zucchini
2 tsp. cinnamon
1 tsp salt
1 tsp. baking soda
¼ tsp. baking powder
3 C flour
1 C chopped walnuts (optional)

Directions:
Directions:
In bowl, beat eggs until foamy, then gradually beat in oil and sugar. Add zucchini, cinnamon, salt, baking soda and baking powder, mixing well. Gradually blend in flour, mixing well after each addition. Fold in nuts.

Pour into greased bundt pan (3 qt.) or loaf pans and bake in moderate oven (350º) for 1 hour or until cake tests done and starts to leave sides of pan. Cool in pan for ten min. Loosen edge, shake loose and turn out on rack to finish cooling. Store in covered tin or wrapped in foil. Freezes very well.
