8 Cloves garlic, minced
2 tsp Cure #1
¼ cup Course salt
2 tbsp Demerara sugar
¼ cup Course ground pepper
2 tbsp Juniper berries, crushed
2 tsp Ground bay leaves
1 tsp Nutmeg
2 tbsp Whole thyme
1 tbsp Cayenne pepper

Directions:

Combine all ingredients. Rub all over the bellies. Place in a large Ziploc bag. Refrigerate for 7 days, massaging it every day. When firm, put cheesecloth and hang for 2 weeks.
