For 25 Pounds

1¼ cups Course salt
1 cup Maple sugar
¼ cup Cure #1 (1 oz for 17 lbs meat)
1¼ cup Dark brown sugar
1¼ cup Dextrose
3 tsp Ground bay leaves
2½ tbsp Cracked peppercorns
5 tbsp Minced garlic
5 quarts Water

Directions:
Directions:
Mix the first 6 ingredients with 2 quarts of water and bring to a boil. Cool. Spray pump bellies. Add remaining ingredients. Place in a tub and refrigerate for 5-7 days until firm. Remove from brine. Rinse under cold water. Allow to dry for 1 hour. Place in a smoker at 140º with the damper wide open. Dry for 3 hours. Apply smoke with damper ¼" open. Run 2-4 pans of chips through until color is reached. Remove when the temperature is 130º.
