3 cups sliced unpeeled zucchini
½ cup onion
2 Tbsp parsley
1 tsp margarine
1 clove chopped garlic
4 eggs
1 cup Bisquick
½ cup Parmesan cheese
½ tsp salt
dash of pepper
½ cup vegetable oil
Directions:
Directions:
Grease a 9x13" pan

Mix all ingredients together, except the zucchini.
Add the zucchini slices once the mixture is mixed well.

Bake at 375º for 25 minutes

Cut into squares -

This is a good side dish!
