12 eggs
1/4 c water
salt and pepper to taste
3 tbsp butter and then
3 tbsp butter
1 c sliced mushrooms
1/2 c chopped green onion
1/2 c coarsely chopped green pepper
1/2 c coarsely chopped red pepper
1/2 c coarsely chopped zucchini
1.2 c coarsely chopped tomatoes
1/4 c green chillies
salt and pepper to taste
1/2 lb monterey jack cheese, grated
salsa

Directions:
Directions:
Beat eggs and water together. Season with salt and pepper. Melt the first butter in frying pan and add egg mixture. Scramble just until moist. Place in large overproof dish; keep warm in 150 oven. Melt the other butter in frying; saute all veggies until tender. Season with salt and pepper. Spoon over eggs, sprinkle with grated cheese and bake at 300 until cheese melts. Serve with salsa
